Yields: 4 servings
leftover cooked turkey
lightly salted restaurant-style corn tortilla chips
low-fat sour cream
jalapeño Monterey Jack cheese
2 tbsp. chopped fresh cilantro
- Heat oven to 425 degrees F. In a saucepan, heat 1 tablespoon canola oil over medium heat. Add salsa and heat to simmering.
- Spray a large, deep ovenproof skillet with cooking spray. Spread 1 cup of the salsa on bottom of skillet. Add 1 cup of the shredded turkey, 1/3 of the chips, 1/3 cup of the sour cream, and 2/3 cup of the cheese. Repeat with the remaining salsa, turkey, chips, sour cream, and cheese to make two more layers.
- Bake for 10 minutes, or until hot and cheese has melted. Top with fresh cilantro.
