Healthy Dessert Recipe: Grilled Pineapple Sundaes
I’m definitely a fan of cooking fruit. I love the way intense heat caramelizes fructose and makes it more than just sweet. Pineapple, which is pretty high in sugar compared to most fruit and can be almost a bit much raw, is the perfect candidate for grilling.
It’s also makes for a super-simple dessert when topped with a little Greek yogurt or froyo. If you somehow happen to have leftover pineapple, the smoky flavor adds great depth to smoothies, cocktails, oatmeal, or yogurt.
Grilled Pineapple Sundaes
1 pineapple, peeled and cored
3 Tbsp honey
Juice of 1 limes
ground Saigon cinnamon, to taste
vanilla ice cream or Greek yogurt
1. Slice the pineapple into ¼- to ½-inch thick rings. In a shallow nonreactive dish, combine honey, lime juice, and cinnamon. Marinate pineapple rings in the mixture for 30 – 90 minutes.
2. Preheat a charcoal or gas grill (to medium high if using gas). Place pineapple rings on grates, over the hottest part of the fire, for about 3 minutes per side. To serve, top with a small scoop of ice cream or yogurt, drizzle with honey, and sprinkle with cinnamon.
