Turkey neck and giblets
rack ribs celery
Pan drippings from turkey roasting pan
1/4 c. all-purpose flour
reserved Cranberry Glaze
1/2 tsp. kosher salt
1/2 tsp. ground pepper
- In a medium saucepan, bring broth, water, neck, and giblets to a boil. Skim foam from surface and discard. Add onion, carrot, celery, and garlic. Reduce heat; simmer, covered, 1 hour. Discard solids. You'll need 3 cups for gravy.
- After turkey is roasted, strain drippings from roasting pan into a 2-cup measure. Skim off fat from surface and reserve 6 Tbsp; discard remaining fat.
- Place roasting pan across 2 stovetop burners over medium heat. Add reserved fat. Whisk in fl our; cook, whisking, until smooth and bubbly. Stir in 3 cups giblet broth and apple cider, scraping up browned bits from pan with wooden spoon. Stir in reserved cranberry glaze and bring to a boil. Boil until thickened, about 5 minutes. Season with salt and pepper. Pour into server.
